- Toast the Pecans Heat a dry skillet over medium. Stir pecans 3–5 minutes until fragrant and lightly darkened. Cool on a plate.

- Cluster the Nuts Arrange 3–4 pecan halves in small groups on the sheets, spaced 1 inch apart.

- Watch the Temperature Heat to 235–240°F (soft-ball stage) with a candy thermometer. Without one, look for a thick, glossy syrup that drips slowly from the spoon.
- Finish & Flavor Remove from heat. Stir in vanilla. Let rest 30 seconds to thicken slightly.
