My best friend and I took our first trip to Italy two summers ago. Zero plan beyond eat everything. Our second night in Florence we wandered into this tiny trattoria the concierge pointed us to. The waiter was a little too charming. Kept calling us “bella” and making eyes every time he came by. My BFF was eating it up (ha). I was just trying to read the menu.

But then the food showed up and I forgot about everything else. He set down this plate of chicken topped with a thick slab of fresh mozzarella that was still warm from the oven. Ingredient Deep Dive
Fresh Mozzarella
Do not use the shredded stuff from the bag for this recipe. For real. Fresh mozzarella is a totally different animal. It’s soft and creamy with a mild milky flavor that melts into something almost silky in the oven.
The bagged shredded mozzarella is drier and chewier because it’s made to hold its shape on pizza. Fresh mozzarella just surrenders to the heat and pools over the chicken in this gorgeous way. You’ll find it in the deli section of the grocery store. Usually in a ball or a log packed in liquid.
Balsamic Vinegar & Brown Sugar
These two together make the glaze that ties the whole plate together. You just whisk them in a saucepan and let them simmer until the vinegar reduces into something thick and syrupy. The brown sugar tames the sharp edge of the balsamic and gives it that sticky sweetness.

Herbs de Provence

How To Make This Caprese Chicken Recipe
Step 1: Bake your frozen grilled chicken breasts in the oven for about 15 minutes.

You’re not cooking the chicken from raw here. You’re warming through chicken that’s already fully cooked and grilled. So this step is quick. Lay them out on a baking sheet and let the oven bring them up to temperature. You’ll start catching a faint smoky scent from those grill marks after about ten minutes. That’s how you know they’re getting close.
Step 2: While the chicken bakes, make the balsamic glaze on the stovetop.

Whisk the balsamic vinegar and brown sugar together in a saucepan. Bring it up to a boil and then drop the heat down and let it simmer for about 10 minutes.

It’ll start bubbling and you’ll catch this sweet tangy aroma drifting off the pan. Keep stirring every couple of minutes. The glaze is done when it clings to the back of your whisk and looks glossy and syrupy.
Step 3: Thickly slice the tomatoes and fresh mozzarella while everything cooks.
You want thick slices here. About a quarter inch or a little more. Thin slices will disappear under the heat and you’ll lose that fresh chunky layer on top. The mozzarella should be sliced about the same thickness.

It needs to be substantial enough to melt over the chicken without completely vanishing. Pat the mozzarella dry with a paper towel so it doesn’t add extra moisture to the chicken.
Step 4: Place a thick slice of fresh mozzarella on each chicken breast and season.
Lay the mozzarella right on top of the warm chicken. Season with salt and pepper. Then sprinkle the Herbs de Provence over everything. You’ll start smelling those dried herbs the second they touch the warm surface.

Put the chicken back in the oven and let it go until the mozzarella gets soft and starts melting down over the sides. It won’t take long. Just a few minutes. Watch for the edges to get slightly golden.
Step 5: Top each chicken breast with a thick tomato slice and fresh basil, then drizzle with the balsamic glaze.
This is the part that makes the plate look like something off a restaurant menu. Lay that bright red tomato right on the melted cheese. Scatter the fresh basil on top. Then grab your balsamic glaze and drizzle it over everything. The contrast of the dark glaze against the white cheese and the red tomato and green basil is gorgeous. 6 Fully Cooked Frozen Grilled Chicken Breasts

8 oz. Fresh Mozzarella cheese

2-3 Large tomatoes

Fresh chopped basil

1 c. Balsamic vinegar

¼ c. Brown sugar

Salt and pepper to taste
Instructions

Preheat your oven to 375 degrees.

Place 6 fully cooked frozen grilled chicken breasts onto a baking sheet, and cook uncovered in the oven for 15 minutes.

While the chicken is baking, place 1 cup of balsamic vinegar into a small pot over medium-high heat, and bring it to a boil.

Once boiling, add ¼ cup of brown sugar to the small pot, and reduce heat to a simmer. Simmer the glaze mixture on low heat for 10 minutes.

Remove the chicken from the oven, and place a slice of fresh mozzarella cheese on top of each chicken breast.

Add salt and pepper to taste on top of the chicken.

Sprinkle some herbs de provence on top of the chicken.Return the chicken to the oven for 1-2 more minutes until the cheese has begun to melt.

Top each piece of chicken with a thick slice of tomato, and pour some of the balsamic glaze on top.
