Instructions:
- Preparation:
- Dice the onion and mince the garlic.
 - Shred the cheddar cheese if not already shredded.
 - Wash the baby spinach and dice the tomatoes.
 
 - Cooking:
- In a large sauté pan, melt the butter over medium heat.
 - Add the diced onion and minced garlic to the pan and cook for 2 to 3 minutes until the onion is tender.
 - Crack the eggs into the pan and season with salt and pepper. Cook for 3 to 4 minutes, stirring frequently, until the eggs are softly scrambled.
 - Add the shredded cheddar cheese to the pan and mix until melted. Turn off the heat.
