Instructions:
- FIRST STEP: Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease the bottom and sides of a baking dish.
- SECOND STEP: Heat the butter in a skillet over medium heat. Add the chopped onion and sauté until the onion begins to soften.
- THIRD STEP: In a large bowl, combine the cooked chicken, sautéed onion, cream of chicken soup, mayonnaise, milk, and chopped roasted red peppers. Mix well. Pour the mixture into the prepared baking dish.
- FOURTH STEP: Bake the casserole for 15 minutes. Remove the baking dish from the oven. Sprinkle 1 cup of the cheddar cheese over the chicken mixture. Then, arrange the refrigerated biscuits over the cheese.
- FIFTH STEP: Sprinkle the remaining 1/2 cup of cheddar cheese over the biscuits. Return the baking dish to the oven and bake for another 20 minutes, or until the biscuits are golden brown and cooked through.
