Slow Cooker 3-Ingredient Poor Man’s Potato and Butter Beans
Ingredients:
- 2 lbs potatoes (russet or yellow, cut into 1-inch chunks)
- 2 cans butter beans (lima beans, drained and rinsed)
- 4 tbsp bacon grease (or lard or unsalted butter)
- 4 cups water
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (optional)
Directions:
Step 1:
Place the potato chunks evenly in the bottom of a 4–6 quart slow cooker so they cook uniformly.
Step 2:
Add the butter beans on top of the potatoes. Spoon the bacon grease or butter over everything, letting it settle into the gaps.
Tip: Bacon grease adds depth and a subtle smoky flavor, especially since this recipe uses water instead of broth. It also helps create a smoother, richer texture.
Step 3:
Pour in the water and add salt (and pepper if using). Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
You’ll know it’s ready when the potatoes are very soft and the liquid turns slightly thick and cloudy.
Step 4:
Give everything a gentle stir before serving.
