Gooey Brownie Pie
Ingredients:
Instructions:
- Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9-inch pie plate or springform pan with non-stick cooking spray.
- Melt butter and chocolate: In a microwave-safe bowl, combine the unsalted butter and 2 cups of the semi-sweet chocolate chips. Melt in 30-second intervals, stirring well after each interval, until the mixture is completely smooth. Allow the melted chocolate mixture to cool slightly.
- Beat eggs and sugar: In a large bowl, using a hand mixer on medium-high speed, beat the large eggs, granulated sugar, and vanilla extract together for 3 minutes until the mixture becomes light in color and fluffy.
- Incorporate melted chocolate: With the hand mixer on low speed, slowly pour the slightly cooled melted chocolate mixture into the egg mixture until it is fully incorporated and the batter is smooth.
- Fold in dry ingredients: Using a rubber spatula, gently fold in the all-purpose flour, baking powder, and salt just until they are combined. Be careful not to overmix.
- Add remaining chocolate chips: Fold in the remaining 1 cup of semi-sweet chocolate chips into the brownie batter.
- Pour into pan and bake: Pour the prepared brownie batter evenly into the greased 9-inch pie plate or springform pan. Bake in the preheated oven for 35-40 minutes. The edges of the pie will be set and puffed up, the top will look crackly, but the center will still appear quite jiggly. Do not overbake if you want a gooey center.
- Cool completely: Remove the Gooey Brownie Pie from the oven and allow it to cool completely at room temperature. The center will set further as it cools.
- Slice and serve: Once the pie has cooled completely, slice it into wedges and serve with hot fudge sauce drizzled generously over the top. Enjoy this intensely chocolatey and gooey dessert!
