Mayonnaise | ½ cup |
Sweet relish | ¼ cup |
Salt | 1 teaspoon |
Spicy mustard | 2 teaspoons |
Dried thyme | 1 teaspoon |
Instructions:
- In a small bowl, place the finely chopped sweet onion and cover it with about ½ cup of cold water. Let the onions soak while you prepare the other salad ingredients. This helps to mellow their flavor.
- In a large bowl, combine the thawed peas, diced hard-boiled eggs, diced sweet peppers, and shredded or diced Irish cheese.
- Drain the soaked onions well and add them to the large bowl with the other salad ingredients. Gently toss everything together to combine.
- Prepare the Dressing: In a separate small bowl, whisk together the mayonnaise, sweet relish, salt, spicy mustard, and dried thyme until the dressing is smooth and well combined.
- Pour the prepared dressing over the salad mixture in the large bowl.
- Gently toss the salad until all the ingredients are evenly coated with the dressing.
- Cover the bowl and refrigerate the Dublin Pea Salad for at least 30 minutes before serving to allow the flavors to meld together.
- Serve chilled as a side dish.
