Frozen peas 2 (12 oz) bags, thawed
Hard boiled eggs 3, diced
Sweet peppers 5, diced
Aged Irish cheese 1 ½ cups, shredded or diced

Sweet relish ¼ cup
Salt 1 teaspoon
Spicy mustard 2 teaspoons
Dried thyme 1 teaspoon

Instructions:

  1. In a small bowl, place the finely chopped sweet onion and cover it with about ½ cup of cold water. Let the onions soak while you prepare the other salad ingredients. This helps to mellow their flavor.
  2. In a large bowl, combine the thawed peas, diced hard-boiled eggs, diced sweet peppers, and shredded or diced Irish cheese.
