This Country Pie is a hearty and comforting dish, combining ground beef, rice, and a flavorful tomato sauce, all topped with melted cheese. It’s a simple, family-friendly meal perfect for a weeknight dinner.

Minute Rice | 1 1/3 cups |
Cheddar cheese, shredded | 1 cup, divided |
Water | 1 cup |
Salt | 1/2 teaspoon |
Salsa | 1/2 cup |
Sour cream | 1/2 cup |
Instructions:
- Preheat your oven to 350°F (175°C).
- Brown the ground beef over medium heat for 8-10 minutes, or until cooked through. Drain any excess grease and season with salt and pepper to taste. Set aside.
- In a large bowl, combine 1/2 cup of the herb tomato sauce with the cooked ground beef, bread crumbs, diced onion, salt, pepper, chopped green bell pepper, and oregano.
- Spread this ground beef mixture evenly on the bottom of a deep pie pan or a 9″x9″ baking dish, pressing it halfway up the sides to form a “crust.”
- In another bowl, combine the remaining herb tomato sauce with the Minute Rice, water, and 1/2 cup of the shredded cheddar cheese.
- Pour the rice mixture over the ground beef “crust” and level it with the back of a spoon.
- Pour the remaining tomato sauce over the rice.
- Bake for 25-35 minutes, or until the rice is cooked.
- Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve warm, topped with a spoonful of salsa and a dollop of sour cream.
