Instructions:
Perfect Boiled Eggs
- Gently place the eggs in a shallow pot.
- Fill the pot with enough water to completely cover the eggs.
- Bring the water to a boil, then immediately turn off the heat.
- Cover the pot and let the eggs sit in the hot water for 15-20 minutes.
Cajun Egg Filling
- Peel the boiled eggs and slice them in half lengthwise. Carefully remove the yolks and place them in a medium-sized bowl. Arrange the halved egg whites on paper towels to dry.
- To the bowl with the egg yolks, add the mayonnaise, hot sauce, sweet relish, 1-2 tsp of Old Bay seasoning, garlic powder, and 2 Tb of fresh chopped dill.
- Mix all the ingredients together until the egg yolk mixture is smooth and creamy. Taste and adjust the seasonings (including salt, pepper, and hot sauce) to your preference.
- Cover the bowl with the egg yolk mixture and set it aside.
Cajun Shrimp
- In a medium-sized pan, heat the cooking oil over medium-high heat.
- Pat the fresh shrimp dry with a paper towel. Add 2 tsp of Old Bay seasoning to the shrimp and stir until they are well coated.
- Sauté the shrimp until they are cooked through (if raw) or until they are slightly charred. This should take a few minutes.
- Halfway through the cooking time, squeeze about 1 teaspoon of lemon juice over the shrimp.
Plating Cajun Shrimp Deviled Eggs
- Scoop the prepared egg yolk mixture evenly into the hollows of the egg white halves.
- Top each filled egg white with one cooked Cajun shrimp.
- Garnish the deviled eggs with a sprinkle of paprika and a pinch of the remaining fresh chopped dill.
