These Pineapple Bars are a delightful tropical treat, combining a buttery, crumbly crust with a sweet and tangy pineapple filling, all topped with a luscious coconut icing. Perfect for gatherings or a sweet afternoon snack, these bars are sure to transport your taste buds to a sunny paradise.

Ingredients:

Crust & Topping:

Ingredient Quantity
All-purpose flour 1½ cups
Cold, cubed butter ¾ cup
Sugar ½ cup
Salt A pinch

Pineapple Filling:

Ingredient Quantity
Large eggs, beaten 2
Sugar 1 cup
Sour cream ½ cup
Salt A pinch
All-purpose flour ½ cup
Fresh pineapple, finely sliced or crushed pineapple, drained ½ of a whole fresh pineapple or 16-ounce can

Coconut Icing:

Ingredient Quantity
Confectioners sugar 1 cup
Half-and-half 2 tablespoons (adjust as needed)
Coconut extract 1 teaspoon

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C/Gas Mark 4). Grease a 9×13 inch baking pan with butter or non-stick cooking spray.
  2. Prepare the Crust & Topping:
    • In a large bowl or stand mixer, combine the flour, sugar, salt, and cubed butter.
    • Mix until the mixture is crumbly.
    • Reserve 1 cup of this mixture for the topping.
    • Press the remaining mixture evenly into the bottom of the prepared pan.
    • Bake for 15 minutes.
  3. Prepare the Pineapple Filling:
    • In another bowl, whisk together the beaten eggs, sugar, sour cream, salt, flour, and pineapple.
    • Once the crust is slightly cooled, pour the pineapple filling over it.
    • Sprinkle the reserved crumble topping over the filling.
    • Bake for 60 minutes, or until golden brown.
  4. Cool the Bars: Let the bars cool for 15 minutes on a wire rack.
  5. Prepare the Coconut Icing:
    • In a bowl, combine the confectioners sugar, half-and-half, and coconut extract.
    • Mix until smooth. Adjust the half-and-half to achieve a thick, drizzle-able consistency.
  6. Ice and Serve:
    • Drizzle the coconut icing over the cooled bars.
    • Cut the bars into squares.
    • Serve and enjoy!
