This French Onion Meatloaf brings all the flavors of the classic soup—sweet, caramelized onions and melted, gooey cheese—into a hearty, savory meatloaf. A mix of beef and pork keeps it moist and full of flavor.
French Onion Meatloaf with Swiss Cheese
Ingredients
- Butter – 2 tablespoons
- Large onions, thinly sliced – 2
- Granulated sugar – 1 teaspoon
- Ground beef – 1 1/2 lbs
- Ground pork – 1/2 lb
- Breadcrumbs – 1 cup
- Eggs – 2
- Milk – 1/4 cup
- Worcestershire sauce – 1 tablespoon
- Salt – 1 teaspoon
- Black pepper – 1/2 teaspoon
- Dried thyme – 1 teaspoon
- Swiss cheese, shredded – 1 cup
How to Make French Onion Meatloaf
Step 1: Preheat the Oven
Set your oven to 350°F (175°C).
Step 2: Caramelize the Onions
In a large skillet, melt the butter over medium heat. Add the sliced onions and sugar. Cook for about 20 minutes, stirring occasionally, until the onions are soft and deep golden brown.
Step 3: Mix the Meatloaf
In a large bowl, combine ground beef, ground pork, breadcrumbs, eggs, milk, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined—avoid overworking the meat.
Step 4: Fold in the Onions
Stir most of the caramelized onions into the meat mixture, reserving a small portion to top the loaf.
Step 5: Form and Bake
Press the mixture into a loaf pan and spread the reserved onions on top. Bake for 45 minutes.
Step 6: Add the Cheese
Remove from the oven and sprinkle the shredded Swiss cheese over the top. Return to the oven and bake for another 15 minutes, until the cheese is melted, bubbly, and the internal temperature reaches 160°F.
Step 7: Rest and Serve
Let the meatloaf rest for 10 minutes before slicing. This helps the juices redistribute, keeping each slice juicy and intact.
