Instructions:
- Preheat oven: Preheat your oven to 350°F (175°C).
- Prepare baking dish: Spray a 9×13-inch baking dish with non-stick cooking spray.
- Cook beef and onion: In a large skillet, add the diced onion and ground beef. Cook until the meat is browned and cooked through.
- Slice potatoes: Slice the peeled potatoes into approximately ¼-inch thick slices.
- Layer the casserole:
- Add a layer of potato slices to the bottom of the prepared baking dish.
- Sprinkle with salt and pepper.
- Top with approximately ⅓ of the cooked ground beef mixture, spreading it evenly.
- Sprinkle with ⅓ of the shredded Cheddar cheese.
- Repeat these layers two more times, ending with a layer of the remaining shredded cheese.
- Prepare the soup mixture: In a bowl, combine the Cheddar cheese soup mix, milk, and evaporated milk (or whole milk). Add additional salt and pepper if desired.
- Pour soup mixture: Pour the soup mixture evenly over the top layer of cheese and potatoes.
- Cover and bake: Cover the baking dish tightly with aluminum foil and place it in the preheated oven.
- Bake: Bake for 1 hour.
