Sliced tamed jalapeno peppers ½ cup
Red pepper (deseeded, chopped) 1
Yellow pepper (deseeded, chopped) ½

Pepperoncini juice 3 tablespoons
Red pepper flakes Pinch
Olive oil 1 tablespoon
Honey or granulated sugar 1-2 tablespoons

Instructions:

  1. Chop vegetables: In the bowl of a large food processor, add the sliced pepperoncinis, sliced jalapeno peppers, chopped red pepper, chopped yellow pepper, roughly chopped white onion, and garlic cloves. Pulse very briefly, just until the ingredients are evenly chopped into small pieces but not pureed into a paste. You want some texture remaining.
  2. Cook the relish: Transfer the chopped pepper mixture to a small saucepan and place it over medium heat. Add the pepperoncini juice from the jar and the pinch of red pepper flakes. Cook for 4-5 minutes, stirring occasionally, allowing the flavors to meld and the vegetables to soften slightly.
  3. Drain excess liquid: If there is a significant amount of liquid remaining in the saucepan after cooking, carefully drain it off. You want the relish to be somewhat thick but not dry.
  4. Add oil and sweetener: Stir in the olive oil, honey or granulated sugar (start with 1 tablespoon and add more to taste depending on your preference for sweetness), and salt and pepper to taste. Mix well to combine all the ingredients.
  5. Cool and store: Remove the saucepan from the heat and allow the pepperoncini relish to cool completely. Once cooled, transfer it to an airtight container and store it in the refrigerator. The relish will keep well in the fridge for several days.
  6. Serve: Serve the pepperoncini relish chilled or at room temperature over cream cheese as an appetizer, as a topping for hotdogs and burgers, or even on a grilled cheese sandwich for a zesty kick. Enjoy!
