These fluffy and delicious banana fritters are a quick and easy breakfast or snack option. They’re perfect for using up ripe bananas and are a great way to start your day with a sweet treat.
Ingredients:

| All-Purpose Flour | 1 cup | 
| Granulated Sugar | 2 tablespoons | 
| Baking Powder | 1 teaspoon | 
| Ground Cinnamon | 1/2 teaspoon | 
| Salt | 1/4 teaspoon | 
| Milk | 1/2 cup | 
| Vanilla Extract | 1 teaspoon | 
| Oil for Frying | As needed | 
| Powdered Sugar (optional) | For dusting | 
Instructions:
- In a large bowl, mash the ripe bananas until smooth.
 - In a separate bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
 - Add the dry ingredients to the mashed bananas, then pour in the milk and vanilla extract. Stir until just combined.
 - Heat about 1/4 inch of oil in a skillet over medium heat.
 - Drop spoonfuls of batter into the hot oil, flattening them slightly with the back of the spoon.
 - Fry each side for 2-3 minutes, or until golden brown and crispy. Be sure not to overcrowd the skillet.
 - Transfer fritters to a paper towel-lined plate to drain excess oil.
 - Dust with powdered sugar before serving, if desired.
