Had this at my friend’s tailgate and I wasn’t leaving without the recipe. A family favorite from now on!
This Slow Cooker Tender Beef Over a Nest of Onions is a perfect recipe for busy weeknights. The slow cooker does all the hard work, resulting in melt-in-your-mouth beef nestled on a bed of caramelized onions.
Ingredients:
| Ingredient | Quantity |
|---|---|
| Beef Chuck Roast | 2 pounds, trimmed and cut into chunks |
| Onions | 4 large, thinly sliced |
| Garlic Cloves | 4, minced |
| Beef Broth | 1 cup |
| Worcestershire Sauce | 2 tablespoons |
| Balsamic Vinegar | 1 tablespoon |
| Dried Thyme | 2 teaspoons |
| Salt and Pepper | To taste |
| Olive Oil | 2 tablespoons |
Instructions:
-
Caramelize the Onions (20-25 minutes):
- Heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized. This takes about 20-25 minutes.
 - Add the minced garlic during the last few minutes of cooking and sauté until fragrant.

 -
Season the Beef (2 minutes):
- Season the beef chunks generously with salt, pepper, and dried thyme.

 -
Layer in the Slow Cooker (5 minutes):
- Transfer the caramelized onions and garlic to the bottom of your slow cooker, creating a flavorful bed.
 - Arrange the seasoned beef chunks on top of the onions in a single layer.

 -
Create the Flavor Base (2 minutes):
- In a small bowl, whisk together the beef broth, Worcestershire sauce, and balsamic vinegar.
 - Pour this mixture over the beef and onions in the slow cooker, ensuring everything is evenly coated.

 -
Slow Cook and Enjoy (6-8 hours):
- Cover the slow cooker and cook on low heat for 6-8 hours, or until the beef is tender and falls apart easily with a fork.
 - Serve the tender beef over mashed potatoes, rice, or your desired side dish. Garnish with fresh herbs for added flavor and color.
