Ingredients:
For the meatloaf:
- Onion (Chopped)
- Olive Oil
- Frozen Peas
- Breadcrumbs
- Garlic (Minced)
- Beef (Ground)
- Large Egg
- Tomato Sauce
- Parsley (Chopped)
- BBQ Sauce
- Salt And Pepper To Taste
For the potatoes:
- Potatoes Peeled And Cubed
- Heavy Whipping Cream
- Butter
- Salt And Pepper To Taste
- Cheddar Cheese (Shredded)
How to make this Meatloaf with Mashed Potatoes and Cheese:
Step 1. Heat the oven to 400 degrees.
Step 2. In a skillet over medium heat, cook 1 chopped onion, and 3 tsp of garlic in 1 tbsp of oil until softened. Remove and let cool.

Step 3. Add ½ cup frozen peas, ¾ cup breadcrumbs, 1 ½ lb. beef, ground, 1 large egg, ¼ cup parsley, chopped and salt and pepper to taste to a mixing bowl with the onions, and knead with your hands until well combined.

Then, add ¼ cup Tomato Sauce.

Then, add ¼ cup BBQ Sauce.

Step 4. Form the mixture into a loaf shape in a 9×13 baking dish. Bake for 30 minutes.

Step 5. While the meatloaf is baking, boil the potatoes until tender. Drain the water.

Step 6. Add in the butter and heavy whipping cream as well as salt and pepper to taste. Mash well.

Step 7. Spread the mashed potatoes on the meatloaf, and top with the cheese.

Step 8. Bake for an additional 20 minutes.!
