This cozy Oven-Baked Creamy Corn and Chicken Casserole is an easy dish featuring tender shredded chicken and two types of corn, all smothered in a rich, cheesy, flavorful sauce and baked to golden perfection.
Oven-Baked Creamy Corn and Chicken Casserole
Ingredients:
- Cooked shredded chicken – 2 cups
- Corn kernels, drained – 1 can (15 oz)
- Cream-style corn – 1 can (15 oz)
- Sour cream – 1 cup
- Grated cheddar cheese – 1 cup
- Chopped green onions – 1/2 cup
- All-purpose flour – 1/4 cup
- Milk – 1/2 cup
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Paprika – 1/2 tsp
- Butter – 1 tbsp
- Fresh parsley – for garnish
Instructions:
- Preheat Oven: Set your oven to 375°F (190°C).
- Mix Chicken and Corn: In a large bowl, combine shredded chicken, corn kernels, cream-style corn, sour cream, cheddar cheese, and green onions.
- Prepare Sauce: In a separate bowl, whisk together flour, milk, salt, pepper, and paprika until smooth.
- Combine Mixtures: Pour the milk mixture into the chicken and corn mixture, stirring until everything is well blended.
- Bake: Grease a rectangular casserole dish with butter. Pour in the mixture, spreading it evenly. Bake for 30–35 minutes, until golden on top and bubbling.
- Serve: Allow to cool slightly, then garnish with fresh parsley and serve warm.
