Ingredients:

Ingredient Quantity
Olive oil 2 tablespoons
Yellow onion 1
Garlic 3 cloves
Diced potatoes 1 ½ cups
Salt To taste
Pepper To taste
Tomato paste 2 tablespoons
Italian seasoning 2 ½ teaspoons
Red pepper flakes 2 teaspoons
Fire roasted tomatoes 2 (14 oz) cans
White beans 2 (14 oz) cans
Vegetable broth 32 oz
Heavy cream ¾ cup
Grated parmesan cheese ½ cup

Instructions:

  1. Sauté Aromatics and Potatoes: In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium heat. Add the diced yellow onion and diced potatoes. Cook for 3 to 4 minutes, stirring occasionally, until the onions begin to soften. Add the minced garlic and continue cooking for another minute until fragrant and the potatoes start to become tender. Season with salt and pepper to taste.
  2. Add Tomato Paste and Spices: Stir in the tomato paste, Italian seasoning, and red pepper flakes. Continue cooking for another 5 minutes, stirring frequently, allowing the tomato paste to deepen in color and the spices to become fragrant.
  3. Simmer the Soup: Pour in the fire-roasted tomatoes (with their juices), drained white beans, and vegetable broth. Bring the mixture to a simmer over medium heat, then reduce the heat to low. Cover the pot and simmer gently for 20 minutes to allow the flavors to meld together.
  4. Add Cream and Parmesan: Stir in the heavy cream and grated parmesan cheese until they are fully combined and the soup is creamy and smooth. Heat through gently but do not boil.
  5. Garnish and Serve: Ladle the Hearty Fire Roasted Tomato Soup into bowls. Garnish with additional red pepper flakes if desired for an extra kick. Serve hot with crusty bread for dipping. Enjoy this robust and flavorful soup!
