
Crispy Chocolate Chip Cookies with Rice Krispies
This recipe takes the classic chocolate chip cookie and gives it extra texture by adding rolled oats and crispy Rice Krispies for a chewy yet crunchy bite.
Rice Krispie Chocolate Chip Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 2 cups rolled oats
- 2 cups Rice Krispie cereal
- 1–2 cups semi-sweet chocolate chips
How to Make Rice Krispie Chocolate Chip Cookies:
Step 1: Preheat & Prep
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, and baking soda. Set aside.
Step 3: Cream Butter & Sugars
In a large bowl, beat butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy (about 2–3 minutes).
Step 4: Add Eggs & Vanilla
Mix in the eggs and vanilla extract until fully combined.
Step 5: Combine Wet & Dry Ingredients
Gradually add the flour mixture to the wet ingredients, mixing just until combined.
Step 6: Fold in Mix-Ins
Gently fold in the rolled oats, Rice Krispie cereal, and chocolate chips until evenly distributed.
Step 7: Form & Bake
Using a cookie scoop, drop dough balls onto the prepared baking sheet, spacing about 2 inches apart. Bake 9–10 minutes, or until the edges are lightly golden.
Step 8: Cool & Enjoy
Let cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
