Classic Mandarin Orange Salad
This Mandarin Orange Salad—often known as Orange Fluff or Ambrosia—is a timeless, nostalgic side dish that blends creamy richness with a bright burst of citrus. The secret lies in the dry vanilla pudding mix, which combines with the crushed pineapple juice to form a smooth, mousse-like texture that perfectly suspends the fruit. Light, refreshing, and always popular, it’s a potluck favorite for a reason.
Mandarin Orange Salad
Ingredients
- Cool Whip (regular or fat-free) – 1 (8 oz) container
- Crushed pineapple, undrained – 1 (20 oz) can
- Mandarin oranges, drained – 2 (11–15 oz) cans
- Instant vanilla pudding mix (dry) – 1 (3.4 oz) package
How to Make Mandarin Orange Salad
Step 1: Make the Base
In a large bowl, gently fold the Cool Whip together with the dry vanilla pudding mix until well combined.
Step 2: Add the Fruit
Stir in the crushed pineapple along with all of its juice. Add the drained mandarin oranges and carefully fold them in to keep the segments intact.
Optional: Reserve a few orange slices for garnish.
Step 3: Chill and Set
Cover and refrigerate for at least 2 hours. This resting time allows the pudding mix to fully thicken and the flavors to blend, creating a fluffy, creamy texture.
Step 4: Serve
Serve chilled as a refreshing side dish, or spoon it over vanilla ice cream for a quick and easy dessert.
