  • 3 large sweet potatoes

  • 1 cup shredded cheddar cheese

  • 6 slices bacon, cooked and crumbled

  • 2 tbsp butter

  • Salt and pepper, to taste

  • Chopped chives or green onions (optional, for garnish)

  1. Prepare the Sweet Potatoes

    • Wash and scrub the sweet potatoes thoroughly. Pat them dry.

    • Prick each potato several times with a fork to allow steam to escape.

  2. Slow Cook

    • Place the sweet potatoes in the slow cooker.

    • Cover and cook on LOW for 6-8 hours (or until tender when pierced with a fork).

  3. Preheat Oven & Prep Potatoes

    • Once cooked, carefully remove the sweet potatoes and let them cool slightly.

    • Preheat the oven to 400°F (200°C).

  4. Stuff the Potatoes

    • Cut each sweet potato lengthwise (without slicing all the way through).

    • Fluff the insides gently with a fork.

    • Add a small pat of butter to each, then season with salt and pepper.

    • Stuff with shredded cheddar cheese and crumbled bacon.

  5. Bake to Melt Cheese

    • Place the stuffed potatoes on a foil-lined baking sheet.

    • Bake for 10-15 minutes, or until the cheese is bubbly and melted.

  6. Serve

    • Garnish with chopped chives or green onions (if desired).
