3 large sweet potatoes

1 cup shredded cheddar cheese

6 slices bacon, cooked and crumbled

2 tbsp butter

Prepare the Sweet Potatoes

Wash and scrub the sweet potatoes thoroughly. Pat them dry.

Prick each potato several times with a fork to allow steam to escape.

Slow Cook

Place the sweet potatoes in the slow cooker.

Cover and cook on LOW for 6-8 hours (or until tender when pierced with a fork).

Preheat Oven & Prep Potatoes

Once cooked, carefully remove the sweet potatoes and let them cool slightly.

Preheat the oven to 400°F (200°C).

Stuff the Potatoes

Cut each sweet potato lengthwise (without slicing all the way through).

Fluff the insides gently with a fork.

Add a small pat of butter to each, then season with salt and pepper.

Stuff with shredded cheddar cheese and crumbled bacon.
