Smothered Pork Chops with Potatoes in Gravy

📋 Ingredients (Serves 4)

Main Ingredients

  • 4 bone-in pork chops (about 1 inch thick)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tbsp vegetable or olive oil
  • 1 medium onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth (low sodium preferred)
  • ½ cup heavy cream or whole milk
  • 1 tsp dried thyme or 1 tbsp fresh thyme
  • 2 lbs baby potatoes, halved or quartered if large
  • 2 tbsp butter
  • Fresh parsley, chopped (for garnish)

👩‍🍳 Instructions

1️⃣ Season the Pork Chops
Pat the chops dry and season both sides with salt, pepper, paprika, and garlic powder.

2️⃣ Sear the Meat
Heat oil in a large skillet or Dutch oven over medium-high heat.
Sear pork chops 3–4 minutes per side until golden brown. Remove and set aside.

3️⃣ Cook the Aromatics
In the same pan, add sliced onions and cook 5 minutes until soft and lightly golden.
Stir in minced garlic and cook 1 more minute.

4️⃣ Make the Gravy
Sprinkle flour over the onions and stir to coat.
Gradually whisk in chicken broth until smooth.
Add cream, thyme, and butter. Simmer 5 minutes until the gravy thickens.

5️⃣ Add Potatoes & Pork Chops
Nestle potatoes into the gravy.
Place pork chops on top and spoon some gravy over the meat.

6️⃣ Simmer Until Tender
Cover and reduce heat to low.
Cook 25–30 minutes, stirring occasionally, until potatoes are fork-tender and pork chops reach an internal temperature of 145°F (63°C).

7️⃣ Finish & Serve
Garnish with chopped fresh parsley.
Serve hot, with extra gravy spooned over each plate.
