Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C/Gas Mark 4). Grease a 9×13 inch baking pan with butter or non-stick cooking spray.
- Prepare the Crust & Topping:
- In a large bowl or stand mixer, combine the flour, sugar, salt, and cubed butter.
- Mix until the mixture is crumbly.
- Reserve 1 cup of this mixture for the topping.
- Press the remaining mixture evenly into the bottom of the prepared pan.
- Bake for 15 minutes.
- Prepare the Pineapple Filling:
- In another bowl, whisk together the beaten eggs, sugar, sour cream, salt, flour, and pineapple.
- Once the crust is slightly cooled, pour the pineapple filling over it.
- Sprinkle the reserved crumble topping over the filling.
