These mini meatloaf muffins are a fun and convenient twist on classic meatloaf. They’re perfect for individual servings and make great leftovers for lunches or snacks.

Meatloaf:

Chopped Onion ½ cup
Chopped Bell Pepper ½ cup
Worcestershire Sauce 2 tsp
Chopped Fresh Parsley 2 Tbsp
Dijon Mustard 1 tsp
BBQ Sauce ¼ cup
Bread Crumbs ⅔ cup
Italian Seasoning 1 tsp
Garlic Powder 1 tsp
Large Egg 1
Salt and Pepper To taste

Glaze:

BBQ Sauce ¼ cup
Ketchup ¼ cup
Honey 1 Tbsp

Instructions:

  1. Preheat oven: Preheat your oven to 350°F (175°C).
  2. Combine meatloaf ingredients: In a large mixing bowl, combine the ground beef, chopped onion, chopped bell pepper, Worcestershire sauce, chopped fresh parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, large egg, salt, and pepper.
  3. Knead the mixture: Knead the mixture with your hands until all ingredients are well combined.
  4. Prepare muffin tin: Grease a muffin tin well.
  5. Fill muffin cups: Divide the meatloaf mixture evenly into 10 sections of the prepared muffin tin.
  6. Prepare the glaze: In a small bowl, stir together the ¼ cup BBQ sauce, ketchup, and honey for the glaze.
  7. Glaze the meatloaf muffins: Top each mini meatloaf with the prepared glaze.
  8. Bake: Bake for 25 minutes, or until the meatloaf muffins are browned and cooked completely through.
  9. Serve: Remove the mini meatloaf muffins from the oven and serve.
