Garlic Butter Steak and Asparagus Bake

This is one of those weeknight dinners that saves the day when time is short but you still want something hearty and satisfying. The secret is a simple infused butter: melted ghee, garlic, parsley, and cracked black pepper. Pour it over sirloin cubes and asparagus right on the baking sheet, slide it into the oven, and let dinner take care of itself.

Directions

  1. Preheat oven
    • Heat to 425°F (220°C).
    • Lightly grease a rimmed baking sheet if needed.
  2. Prep steak & asparagus
    • Pat steak cubes dry; season with ½ tsp salt.
    • Rinse asparagus, snap off woody ends, pat dry.
    • Arrange asparagus on one half of the sheet, steak on the other.
  3. Make garlic butter
    • In a small bowl, whisk melted ghee, garlic, parsley, pepper, remaining salt, and paprika (if using).
  4. Coat & arrange
    • Pour garlic butter evenly over steak and asparagus.
    • Toss gently on the sheet until coated.
    • Spread back into a single layer for even roasting.
  5. Bake
    • Roast 12–15 minutes, until asparagus is crisp‑tender and steak reaches desired doneness (135–140°F for medium).
    • For extra browning, broil 1–2 minutes at the end, watching closely.
  6. Rest & serve
    • Let steak rest 3–5 minutes on the pan.
    • Taste and adjust seasoning.
    • Squeeze fresh lemon over the top before serving.
