This comforting and flavorful Slow Cooker Creamy Potato Bacon Soup is a perfect warm meal for chilly days. It combines the savory taste of bacon with tender potatoes and a rich, creamy broth, all cooked to perfection in your slow cooker.

Ingredients:

Onion, finely chopped | 1 |
Condensed chicken broth | 2 (10.5 ounce) cans |
Water | 2 cups |
Potatoes, diced | 5 large |
Salt | ½ teaspoon |
Dried dill weed | ½ teaspoon |
Ground white pepper | ½ teaspoon |
All-purpose flour | ½ cup |
Half-and-half cream | 2 cups |
Evaporated milk | 1 (12 fluid ounce) can |
Instructions:
- Cook bacon and onion: Place the bacon pieces and finely chopped onion in a large, deep skillet. Cook over medium-high heat until the bacon is evenly browned and the onions are softened. Drain off any excess grease.
- Add to slow cooker: Transfer the cooked bacon and onion mixture to a slow cooker. Stir in the condensed chicken broth, water, diced potatoes, salt, dried dill weed, and ground white pepper.
- Slow cook: Cover the slow cooker and cook on Low for 6 to 7 hours, stirring occasionally.
- Prepare creamy mixture: In a small bowl, whisk together the all-purpose flour and half-and-half cream until smooth.
- Add creamy mixture and evaporated milk: Stir the flour and half-and-half mixture into the soup in the slow cooker, along with the evaporated milk.
- Final cook: Cover the slow cooker again and cook for another 30 minutes, or until the soup has thickened slightly and the potatoes are very tender.
- Serve: Ladle the creamy potato bacon soup into bowls and serve hot. Enjoy!
