This creamy cucumber salad is a refreshing and flavorful side dish perfect for summer barbecues, potlucks, or alongside grilled meats and fish. It’s easy to make with simple ingredients and comes together in just minutes.

Ingredients:

Ingredient Quantity
Cucumbers 3-4 Kirby pickling cucumbers
Red onion (optional) ½ small, thinly sliced
Sour cream ½ cup
Mayonnaise ⅓ cup
Fresh dill, chopped ¼ cup
Fresh lemon juice ½ tablespoon
Salt and black pepper To taste

Instructions:

  1. Prep the Cucumbers:

    • Wash the cucumbers and pat them dry. Peel them if desired, though it’s not necessary for Kirby cucumbers.
    • Slice the cucumbers thinly. You can use a knife, mandoline, or spiralizer for different textures.
  2. Optional: Add Red Onion:

    • If using red onion, thinly slice it and add it to a bowl with the cucumbers.
  3. Make the Creamy Dressing:

    • In a separate bowl, whisk together the sour cream, mayonnaise, chopped dill, lemon juice, salt, and pepper. Taste and adjust seasonings as needed.
  4. Combine and Chill:

    • Pour the creamy dressing over the cucumbers and red onion (if using). Gently toss to coat everything evenly.
