Bacon-Wrapped Asparagus Bites
Every spring, my aunt marked the start of grill season with a platter of these bacon-wrapped asparagus bites, and they never lasted long—gone before anything else on the table. They look elegant, almost indulgent, yet they’re made from just two simple ingredients and a hot oven (or grill). Smoky, salty bacon crisps around tender asparagus, giving you that irresistible mix of charred tips and juicy centers.
They’re naturally low carb, quick to prep after work, and perfect for those first sunny evenings when you want something special without fuss. Serve them warm on a ceramic dish so the bacon stays crisp. Pair with sparkling water, a dry white wine, or a light beer. For a full low-carb meal, add grilled chicken, steak, or salmon with a green salad. At a spring cookout, set them alongside deviled eggs and a veggie platter for a balance of lighter bites and smoky richness.
Bacon-Wrapped Asparagus Bites
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Fresh asparagus spears | 1 pound | Thin to medium, woody ends trimmed |
| Thin-cut bacon | 12 ounces | About 12 slices |
Directions
- Preheat oven to 400°F (200°C). Line a baking sheet or shallow ceramic dish with parchment or lightly grease for easy cleanup.
- Rinse asparagus and pat dry. Trim woody ends by snapping or cutting 1–2 inches from the bottom.
- Cut bacon slices in half crosswise.
- Gather 3–4 asparagus spears into a bundle. Wrap with half a slice of bacon in a spiral, ending underneath to secure. Repeat with remaining asparagus and bacon.
- Arrange bundles in a single layer on the prepared dish, leaving space between each.
- Bake 18–25 minutes, until bacon is browned and crisp and asparagus tips are lightly charred. Broil for 1–2 minutes at the end if you like extra-crispy bacon.
- Rest 3–5 minutes in the hot dish, then transfer to a serving platter or serve family-style straight from the dish. Enjoy warm while the bacon is at its crispiest.
