Cowboy Meatloaf and Potato Casserole
Ingredients:

| Breadcrumbs | 1 cup | 
| Ketchup | 1/4 cup | 
| Worcestershire Sauce | 2 tablespoons | 
| Dried Thyme | 1 teaspoon | 
| Salt & Pepper | To taste | 
| Potatoes | 4 large, thinly sliced | 
| Cheddar Cheese | 1 cup, grated | 
| Chopped Fresh Parsley (optional) | For garnish | 
Instructions:

Preheat and Prep: Heat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.

Mix the Meatloaf: In a large bowl, combine ground beef, onion, garlic, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix well until everything is evenly incorporated.

Layer the Casserole: Spread half of the sliced potatoes on the bottom of the greased baking dish. Shape the meatloaf mixture into a loaf and place it on top of the potatoes. Arrange the remaining sliced potatoes over the meatloaf, covering it completely.

Bake and Cheese Up: Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil, sprinkle the grated cheddar cheese on top, and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
