
Cheesy Cauliflower Casserole

Cheesy Cauliflower Bake

| Chopped fresh cilantro (optional) | ¼ cup |
Instructions
1. Roast the Cauliflower
Preheat oven to 400°F (200°C). Toss the cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast 25–30 minutes, until tender and lightly golden.
2. Make the Cheese Sauce
While the cauliflower roasts, melt together cheddar, Monterey Jack, cream cheese, and half-and-half in a medium saucepan over medium heat. Stir until smooth and creamy.
3. Season the Sauce
Add garlic powder, onion powder, paprika, and cayenne pepper (if using). Stir until fully combined.
4. Combine and Bake
Transfer roasted cauliflower to a baking dish. Pour the cheese sauce over it and gently mix to coat evenly. Bake 15–20 minutes, until bubbly and lightly golden on top.
5. Serve
Let cool slightly, then sprinkle with fresh cilantro if desired and enjoy!
