This Oven-Baked Cheesy Sausage and Potato Bake is a simple, rustic sheet-pan meal. The high oven heat caramelizes the sausage and crisps the potatoes perfectly. By roasting the potatoes first, they reach a fork-tender texture without overcooking the sausage. Melted cheddar ties the earthy thyme and smoky sausage together for a hearty, one-dish dinner.
Ingredients
Base
- 2 lbs potatoes, peeled and cubed
- 1 lb sausage (your favorite), sliced
- 1 tbsp olive oil
Seasoning & Finish
- 1 cup shredded cheddar cheese
- 1 tsp dried thyme
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Directions
Step 1: Prep and Season the Potatoes
Preheat oven to 400°F. In a large bowl, toss the cubed potatoes with olive oil, thyme, salt, and pepper, coating evenly.
Step 2: Initial Roast
Spread the potatoes in a single layer on a baking dish or rimmed sheet pan. Bake 20 minutes, until the edges start to turn golden.
Step 3: Add the Sausage
Remove from the oven and add the sliced sausage. Stir to coat the potatoes with sausage juices, then return to the oven.
Step 4: Brown and Crisp
Bake another 20–25 minutes, until the sausage is nicely browned and the potatoes are tender.
Step 5: Cheesy Finish
Sprinkle shredded cheddar over the top. Bake 5–7 minutes until melted and bubbly.
Step 6: Garnish and Serve
Let sit 2–3 minutes to set slightly. Top with fresh parsley and serve hot.
