- Combine & Cook: Place the 3 ounces of dry rice (which you have rinsed until the water runs clear), 5 cups of water, and 2 tablespoons of granulated sugar in a large saucepan. Stir to combine. Bring the mixture to a boil, then immediately reduce the heat to a low simmer. Cook for 45 minutes to 1 hour.
- Strain & Flavor: Remove the saucepan from the heat. Stir in the 1 tablespoon of vanilla extract (or your chosen flavoring). Using a fine-mesh sieve or colander, strain the rice out of the liquid. Reserve the cooked rice for another use, leaving just the tea.
- Chill & Serve: Pour the rice tea into a pitcher or other container and place it in the refrigerator. Allow it to chill completely, which should take about 2 to 3 hours. Serve the Victorian Rice Tea chilled or over ice.
